Butter Chicken

I absolutely adore Indian food, however I can never be sure of the quality of the ingredients if I go to a restaurant or a store that sells Indian food. I know a lot of people feel a bit daunted in trying their hand at Indian at home, but I can assure you that once you see how easy this recipe is, it will become a favourite in your home.  We use thigh meat from the chicken as it has so much more flavour and the texture is so much nicer than breast meat.  I love to serve this with either cauliflower or broccoli rice or pretty much any vegetable but I find the vegetable ‘rice’ accompaniments are great as they tend to soak up the sauce and as you know there is a lot more nutrients in vegetables than there is in a boring bowl of rice.


Ghee, coconut oil, tallow duck fat or other good quality fats, onion, garlic, garam masala, ground cardamom, ground coriander, ground ginger, cumin,  paprika, cayenne pepper, sea salt,  lemon juice, tomato paste, chicken stock, coconut milk,  chicken thigh fillets, coriander leaves, cauliflower rice.
