I absolutely adore Indian food, however I can never be sure of the quality of the ingredients if I go to a restaurant or a store that sells Indian food. I know a lot of people feel a bit daunted in trying their hand at Indian at home, but I can assure you that once you see how easy this recipe is, it will become a favourite in your home. We use thigh meat from the chicken as it has so much more flavour and the texture is so much nicer than breast meat. I love to serve this with either cauliflower or broccoli rice or pretty much any vegetable but I find the vegetable ‘rice’ accompaniments are great as they tend to soak up the sauce and as you know there is a lot more nutrients in vegetables than there is in a boring bowl of rice.
